Easy and Healthy BBQ Choice – Chicken With Pineapple

When it comes to having a barbecue dinner there are a lot of factors to be considered to have the perfect results.

The very few rules I go by are:

  • Wait for the grill to have the optimal heat, and never rush. Grilling takes time.
  • Choose spices that match the smoky taste.
  • Don’t let any food burn.

If you keep these in mind, there is a slim chance to go wrong. So here is my grill recipe, I hope you’ll enjoy it.


  • 2 bigger chicken breasts
  • Olive or Sesame oil
  • Sliced pineapples (preferably fresh, try not to go for the tinned ones as they will cook too soon)
  • 2 onions
  • Some garlic (to taste)
  • 1 lime
  • Worcester sauce
  • Salt, pepper, marjoram, rosemary
  • Some wooden sticks

The day before, cut the chicken up for bigger cubes. When I say bigger, I mean about a quarter of a fist. A smaller fist.

Then comes the making of the marinade. Get a bigger bowl that can hold all the meat, and some extra. Pour 2 dl of the oil in and add a teaspoon of the Worcester sauce. Crush some garlic (I never give advice on how much garlic to use, as it is a sensitive point. Each and every person has their own garlic preferences.) and add them to the mix. A pinch of salt a pepper should be added now, and the marjoram. Be brave on the marjoram, 2 teaspoons at least! If you happen to have some fresh chives, a sprinkle won’t hurt. Squeeze in the juice of a half lime to finish it off. Stir these up and add the meat. Make sure they all get covered. If you need to, top it up with some more oil.

Let it rest in the fridge overnight.

The next morning (or about 2 hours before grilling) add the rosemary. Make sure it has whole leaves and not ground. Back to the fridge it goes.

Before grilling, cut the pineapples if needed and cut some onions. I usually only cut them up to quarters so they match the size of the meat. When it is all done, broach them on the wooden sticks. First, one quarter of an onion, a piece of chicken and a slice of pineapple. Oh and basically repeat this, making sure that each meat chunk has an onion and a pineapple on the side so the flavour mixes well.
