Easy Holiday Recipes You Can Make on The Grill

Grilled Holiday ChestnutsWhile most Americans think of grilling as an activity suited for warm, sunny days, it certainly doesn’t have to be relegated to a single season. If you’re lucky enough to live in a state with mild weather year round, there’s no reason to ever bring the cooking indoors! For the rest of us stuck in slightly colder climates, grilling outside can seem unappealing in rain or snow, but it’s not completely out of the question. Throw on a jacket and some warm boots, and make the most of your grill year round. You might be surprised, but some popular winter treats are infinitely enhanced when cooked on the grill.

Holiday favorites like roasted chestnuts and pound cake aren’t normally associated with grilling, but for an explosion of flavor and a unique twist on a classic, try revamping these family favorites this season.

How do you grill chestnuts? It’s easy. You will need a very high, direct heat to bring out the natural meaty flavor of the nut. While you can roast chestnuts “on an open fire” like the carols suggest, the grill provides an equally ideal environment with much less hassle. Your grill, whether gas or charcoal, provides the intense heat necessary for cooking chestnuts.

Maybe you’ve heard of chestnuts popping on an open fire? Avoid that! To keep them from exploding open, cut a small X in the shell of the chestnut to let out the steam as they cook. You can do this by using a small paring knife and firmly pushing the point of the blade through the shell.

  • Inspect the chestnuts prior to throwing them on the grill and toss any that are cracked, moldy, or rattle around in the shell.
  • Preheat the grill to 400 degrees Fahrenheit.
  • Rinse the chestnuts off.
  • Place the chestnuts directly on the cooking grate. (If needed, place the nuts in a grill topper or in a tin with holes punched in the bottom to avoid chestnuts falling through the grill grates.)
  • Cook for 15 minutes but watch carefully to prevent burning. Turn the nuts approximately every 5 minutes so they cook evenly and the shells do not burn.
  • Remove them from the grill and let them cool slightly so they are safe to handle.
  • Crack open the shells and eat immediately. Chestnuts are best served warm.

When it’s completely cool, cut the cake into individual slices about 1 inch thick. Get the grill fired up and wait until the temperature hits about 400 degrees F. Slather both sides of each slice of pound cake with butter and place on the grill directly on the grates. Flip the slices after about 2 minutes or when you start to see charred grill marks forming across the cake. Remove from the grill when both sides are browned slightly. Top with fresh strawberries and whipped cream or baked cinnamon apples.

While we normally think about grilling meats or veggies – there are many different foods that can benefit from the heat and flavor-enhancing properties of a gas or charcoal grill. And, once you’ve seen how easy it is to make traditional holiday treats on the grill, you’ll never want to go back in the house!
